Preheat Oven to 170C. Butter the Baking Tin and dust with some Plain Flour.
Into a flat bottom saucepan add: the brown sugar and two eggs.
Mix with electric mixer until smooth.
Add the melted Butter to the batter and keep mixing.
Set aside 75g of Bananas and puree the remaining 325g of Bananas. Set aside the pureed Bananas.
Add the Plain Flour and Baking Powder to the Sugar, Egg and Butter batter and mix until smooth with electric mixer.
Now add the pureed Bananas to the batter and mix with electric mixer until smooth.
Thinly slice the remaining 75g of Bananas into the batter.
Throw in the Walnuts.
Gently fold the sliced Bananas and Walnuts with a spoon until evenly distributed.
Pour the Batter into the Baking Tin.
Place Baking Tin into the centre shelf of your preheated oven (170C) for 50min - 60mins.
At 50min, push a matchstick into your Banana Bread; if it comes out clean take your Banana Bread out of the oven. Your Banana Bread is cooked. Otherwise put it back in for another 5min - 10min.
Let your Banana Bread cool for 10mins in the Tin and then take it out.
