No that we are end of the summer
coming into the autumn we have got the first of our early apples. We've have quite a poor harvest this year
so we're going to try maximise everything we do.
One of the things
is uh... lovely apple juice so we'll be turning these
delicious discoveries
into this
delicious apple juice
and heres how.
The first thing we do is pick the apples off the tree,
not from the floor. This is one of the windfalls which is bruised
we wouldn't put this in
it looks like the on one side
You see its started to break down where its hit the ground its created a bruise
which is starting to rot
and another day later
we see one that has been a little bit longer
that also see a lovely insect tracks
most insecure sting
so that is good Once we've picked the apples we then
chop them up so it makes it easier to press we use a mechanical cropper
to chop up the apples which helps to pulp them up we then
put them into a cheese cloth into a former we build these up in layers
these are called cheeses, each one is a cheese
once we've
made all of our cheeses
we then put on a top plate which is a solid oak block
with a brass bush on the top of it
now we start to wind the screw down
which you can start to see releases the juice. this screw when it's fully wound down
is equivalent toto twelve tons of force
thats why you can really see the juices start to flow now
once we have pressed the juice out
we then bottle the juice
and its pasteurised this will keep it for over twelve months
