When it comes to carp recipes, mostly what you'll get from people are jokes.
But carp can make great eating...all you need is a terrific recipe!
And that's what we have today...a dish that combines
the healthy benefits of fish with the pizzaz of cajun spices!
You'll need two cups of the flaked, cooked carp.
Slice onion in quarter-inch thick rings, then cut them in half.
Slice bell peppers length-wise in quarter-inch strips.
And slice the celery one half-inch thick.
Melt a quarter-cup of butter in a large saucepan or skillet.
Add flour and stir until light brown...then add the onion, peppers and celery.
Cook and stir until the vegetables are softened.
Add the broth, parsley, cajun seasoning, paprika, file, salt and tabasco.
Bring this mixture to a boil, then simmer until the vegetables are almost done
and the broth is slightly thickened...about 15 minutes.
Add tomatoes, shrimp and carp.
Cook until the shrimp is done...about five minutes.
Serve over rice, and garnish with parsley.
So the next time someone tries to make carp the punch line of a joke,
hand them a plate of carp cajun, and watch them change their tune!
