Hello and welcome back to the sweet treat series. I am Tess and in this episode I am
going to be making poached pears. [music]
So I have got a bottle of wine in my pan here which I am gently heating. To that I am going
to add my sugar, my vanilla pod, which I am going to slice down the middle. Do not worry
about scraping out the seeds because it is going to be soaking in the liquid so they
will come out anyway. But, if you want to make it extra 'vanillary' you can just give
them a little scrape and get all of those seeds straight into the pan.
So, I have got half of a cinnamon stick which I have crushed here, which I am going to add
to the pan as well. So, I have added all my ingredients to the pan and I am going to bring
that to the boil. But, for the full list of ingredients just check out the description

So, my pan of wine is just coming to the boil and I've got my pears here which I have peeled.
And I soaked them in water with a little lemon juice. This stops them from discoloring. So,
I am just going to put them in the pan gently.
So, I am just going to leave these for twenty minutes to poach. I am going to pop a lid
on and I will come back to check on them in about fifteen just to make sure that they
are getting on ok.
So, my pears have had about fifteen to twenty minutes and they are definitely cooked. So
I am just going to gently, gently being the operative word here, take them out without
damaging them. I am just going to place them in a bowl. So, I am just going to let this
reduce for twenty minutes. So, my wine has been boiling nicely now for about fifteen
minutes and it has reduced to about the amount of two cups so I am just going to sift it
straight into the bowl with the pears. Just cover them in the liquid.
So, I am going to leave my pears to cool for a little bit before I put them in the fridge,
because I do not want to raise the temperature of my fridge. So, I just pop those to one
side. They will need a couple of hours in the fridge, just until they are nice and cold.
[whosh] So, my pears have been in the fridge for a couple of hours. They are nice and cold
now. I have just taken one of them and I have simply sliced thru it and just arranged it
on the plate like so. Really, really easy. I am just going to add a little bit of the
poaching liquid to the pears, so nice and sweet. And, I am just going to go into the
plate with a little mascarpone cream. This is some masarpone cheese and a couple of tablespoons
of honey. And, I am going a bit fancy and I am going to pipe it. I am just going to
pipe it in a little circle.
So there you have it. It is my poached pears recipe, spiced, sweet, fragrant, amazing.
