DAVID POSTADA: Hi. This is Dave for Expert Village. Today, we're going to make one of
my all-time favorite comfort foods, salmon cakes. Alright, now we have our poaching liquid
ready, we're going to put in our salmon that we've already taken the skin out. As you recall,
the poaching liquid here has just water, some lemon and salt and pepper in there. You're
going to add some wine. You can also add peppercorns in there, whatever flavor you really like
for it. But this is just a really simple thing. So now you just want to go ahead and lay your
salmon in here. We're going to be poaching this for about three to four minutes. You
can see how the color has already changed as you put it into the water. If you just
go ahead and put it in like that, kind of move things around. Make sure it's totally
submerged in there. There's your lemon. See, it's already started to change its color.
So leave it for about three or four minutes with this and this will be ready. We'll cool
it down a little bit and be ready to flake this and then we'll be ready to start putting
together our salmon cakes.
