Hello, my name is Melissa and on behalf of Expert Village today we are going to learn
how to make morning glory muffins which are absolutely perfect for Christmas morning breakfast.
In this clip it is time now to combine into our dry ingredients but not raisins, coconut,
carrot and apple. Now what you will notice at the end of this clip is the preparation
part of it. You will maybe have a sore arm or elbow and the end of this because you do
have to do a little bit of grating and you will also notice that this batch of muffins
is a little bit more tedious than making the best ever banana muffins but I assure you,
in the end, it is completely worth it. So let's get started. What we want to do is put
into our dry ingredients; a half a cup of nuts, in this case I've used pecan nuts. I
think they taste the best, especially when doing some baking. So we'll drop that in,
a half a cup of nuts, your choice of nuts, again I like pecans. Half a cup of raisins,
now a little trick I do with raisins, you might notice they look a little on the wet
side, because they are so shrivelled up I find they bake better if you boil water, dump
your half cup of raisins into the water and then drain them. Let them just sit enough
so that they soak up a little bit of the water in there and they expand slightly. So that's
what we've done with these. So, we'll put in a half cup of raisins. Next, you don't
have to, but I think it does add a bit of flavor, a half a cup of coconut. You really
don't taste the coconut all that much in the morning glory muffins because there's so many
ingredients that are put into this but it definitely adds to the flavor. And finally,
this is what is going to give you a bit of a sore arm, and well also, depending on the
nut, you need to grind those nuts up or crush the nuts depending what kind. If you get them
whole you will definitely have to crush them, or you can already buy them precrushed. Next
we need two cups of grated carrots and one apple that needs to be cored, peeled and then
you want to grate that as well. So I've put that into this mixture here, kind of stirred
it up and then we're going to dump that concoction into the bowl as well. So you can see we're
starting to get quite a mixture into our batch here. And what we are going to do is stir
this up, and you need a big strong arm for this as well because it gets to be a bit difficult
stirring all this together. And once I get this stirred up I will meet you in the next
clip.
