Low-Carb Dukan Cheesecake, New York Style.
Delicious!
Preheat the oven to 400 F / 200 C / gas mark 6. In a baking mold
combine 3 tablespoons oat bran, 2 tablespoons skim powdered milk,
1/2 teaspoon cinnamon and a pinch of salt
(sea salt or kosher salt) You can also add 1 teaspoon
low-fat sugar free cocoa powder (this is optional)
Add 2 egg whites and mix.
Bake for 10 minutes until golden brown.
Then take this biscuit out the oven and
turn down the temperature to 300 F / 150 C / gas mark 2.
Let the biscuit cool down a little bit and crumble it using your hands or a food procesor.
To save time and effort, what I do is cook 3 or 4 oat bran biscuits at a time
crumble them and then freeze in separate plastic bags.
This way, I always have biscuit crumble ready to use. When I want to bake a
cheesecake, I just take a bag out of the freezer and I'm ready to go.
Now, let's combine 1 tablespoon sweetener and
4-5 tablespoons skim milk, pour over the crumble
and mix using your hands. This will be the crust of the cheesecake:
you can use a glass to press the crumbles. This biscuit is enough to cover the bottom of a 8 inch / 20 cm mold.
Let's make our cheese batter. We need 16 oz (500 ml) of fat free Quark. If you don't have fat free Quark cheese, you can use
a mix of fat free cream cheese and fat free greek yogurt (half of each) or
just mix 20 to 22 oz of fat free plain yogurt (625 ml)
with 1 teaspoon sea salt and strain for 12 hours, using a thick cotton or linen cloth.
I just hang the cloth inside a glass jar. Do you want to know more

to watch the video. Combine Quark with 2 tablespoon corn starch,
3 slightly beaten eggs and
1 tablespoon sweetener
Whisk until you get a smooth batter, carefoully pour over
the oat bran biscuit crumble
and bake for 30 minutes.
The cake will rise and then deflate (fall) when cooling down.
Take the cake out of the oven and let it cool down completely on the counter top.
Then refrigerate for at least 4 hours or, even better,
overnight. Mmmmm, yummy!
