>> STACY: This is our Meet The Neighbors series and we are right next door
to Park Central, just steps away at a fabulous restaurant called Sardinia
Enoteca Ristorante. And I am with the owner and executive chef, Pietro Vadreu.
Pietro, I know you have a very unique menu that is very dear to your heart
from your homeland of Sardinia. How is your menu unique and also how do you
use your wood burning stove in the back?
>> PIETRO: We use our wood burning stove, first of all, to grill our steak,
our bake branzinos, salt crusted branzinos. Most of the vegetables. Most of
the other fishes we have in the restaurant. Uh, why we are unique is because
we don't, first we don't cook with butter. We don't cook with the, we only
cook with the great ingredients. Extra *** olive oil and everything is
very, very simple. If you look at our menu you'll find out that every
single item is so simple and nice.
>> STACY: What are you bringing to the wine scene here in Nashville?
>> PIETRO: Sardinia wines from the south of Italy that are really, really,
I think it is the first time they are coming in this area. They are very
very good.
>> STACY: How do you feel about social media and how everyone these days
is a food critic?
>> PIETRO: I love it, because of in the early days in New York, every Friday
you used to, you would buy the New York Times and the one guy he could make or
break a restaurant. These days, Yelp and all these uh uh groups they, um,
everybody is a critic and I love that. Because everyone gives his opinion and
so far Sardinia is almost 5 stars in every, I mean from Open Table to Yelp
so I love them.
