I'm here today to prepare a healthy dip for festive occasion - whatever they might be.
So what I will start with is some fat free Greek yogurt.
This recipe is in my head. I cook to the flavor I enjoy.
I'm just going to put in enough to give me some good flavor
I can always go back and add more later.
Let's start with the shallot.
I'm going to cut that up. I don't need a ton of it. Enough for flavor.
You want to make sure that it's well-minced.
It might be kind of rugged on somebody if they get a big hunk in their mouth.
We want to get it where it's a nice, delicate taste.
I will set that to the side. Now add a little garlic.
Now cut up a little cucumber.
I'm going to leave the skin on for color.
Now add the yogurt. Let's ssee what happens.
OK. That's going to give us our nice base.
I'm going to chop up some fresh basil.
Alright. Let's taste and see how it is.
Mmmm...that's good.
I'm going to add a little more fresh basil and a little more garlic...
... just to bump the flavor up.
It is good, but I like it flavorful.
You want to have enough in there to really bring out the flavor.
And decorate with a little bit of our basil chiffonade.
There you go. Mmmmmm... now that's it. That's it right there.
