Alright, now on this episode we're going to make broccoli and cheese.
Here now Tirta would like to explain the ingredients. Go on, Tirta.
Well, for the ingredients, we've got broccoli. And cheese, we're going to use mozarella and red cheddar.
And also we need some milk, fresh milk.
And here I've got roux.
You guys remember what is roux, right?
Roux is made from butter and flour which had been cooked.
Alright, now Icun is going to blunch broccoli first. And I'm going to make bechamel.
Bechamel is made from roux and fresh milk.
Is it your prided roux? Yep.
Ok. Is it the control one? Surely.
So historically, for his thesis Tirta was making roux, but it can't be consume instantly.
And now, we are cutting this broccoli to be some slices.
Don't forget to cut this slowly to make sure that they're well-cut enough.

Just use a small fire.
Warm this roux up.
And now, we can add some fresh milk.
Slowly but sure, we can beat them till mix enough.
What about the roux, Tir?
They just begin.
Well, to make them cooked faster I'll lid the pan.
The ratio for making the bechamel or other sauces which is using roux.
For example veloute the one which made from broth and roux.
The ratio is 3 to 1, 3 dosages of broth liquor with one dosage of roux.
To make sure they're gravy enough.
While here I'm going to explain, before broccoli going to be blunched
Because sometimes there still much bacteria or maggots at broccoli or cauliflower,
we better put them on water for a while and also add some salt. Undoubtedly...
TIRTA: Undoubtedly...
Undoubtedly, the maggots will have gone.
Just take a while, for this one boiled up.
The differences between blunch and boil is whenever boil is use for cook some veggies
which come from root part, like carrots. TIRTA: Potatoes.
Potatoes, they have to be cooked from the fire begin, when the water is still cold.
From fresh water. Whenever blunch is the one when the water has been warming up from ten until twenty minutes.
It's like the water must had boiled up, then add the veggies. Because when the water boiled up too long,
This kind of green color from the veggies would become darker and the vitamin has gone.
So, it's probably when your mother or father cook some veggies take a time too long.
That one is really not good, like the green color become darker. And it gave less nutrient or probably it almost contains no nutrient.
But it tastes delicious.
If the bichamel looks like as a thick gravy we can add some fresh milk again.

After done with this one we can leave it for a while and add the seasoning.
Add some salt.
Just add a bit, because we're going to use cheese. So it already has a salty taste.
Add some pepper.
Mix them up.
Then add a few of sugar.
To make it deliciously oily and salty.
It's as an alternate of MSG.
ICUN: But well, for myself at home I still like to use MSG.
Well, you have to reduced that one.
Well, this is already done.
We can warm it up again later. Now we can turn off the fire first.
And here, the water is about going to boil. Just wait for some bubbles up.

But the mozarella is a must. It makes them melted up.
It's a bit difficult to put the cheese much.
Well, actually broccoli and cheese have some other choices. Whether it can baked or burned up again.
