Hi everyone, I'm Rockin Robin from Cooking Mexican Recipes.com
It's almost Valentines Day and I wanted to share with you how to make your own chocolate covered strawberries
And I'm even going to show you how to drizzle the white chocolate over the top
To give it a more professional look
Now not only is this recipe easy, anybody can do it
It's really quick to put together, and it will save you some money because you are doing it yourself
So let's go over our ingredients
What we need are strawberries. I went to the store today and picked these up.
Nice and big and you want to wash them and pat them dry so the chocolate will stick
Now here I want to point out one little special strawberry here
I was going thru the pack and I was washing them and I noticed this little guy here
Here he is, I call him Bob the Bionic strawberry
Look at him. He's so cute. He is my favorite strawberry here.
Alright so next we need some shortening, I've got two tablespoons of shortening
To go into the chocolate chips
These are milk chocolate because I like milk chocolate.
But you can use semi sweet if you like.
Then for our topping, our little drizzle
We are going to use some more shortening, about 1 tablespoon
With some white chocolate chips
Ok to get started we want to get a double boiler
I have one here. But if you don't have one, here is a quick way to make one up
Get a sauce pan, a metal bowl and put some water in here
Set it on top and you can make your own double boiler
Ok so I got my temperature on medium low
And I am going to go ahead and pour my chips into the double boiler
Along with my two tablespoons of shortening
I don't want this water to get too hot or too bubbly
Because if this chocolate gets too hot it's going to clump up
So we are going to melt this slowly. It will take maybe just a couple of minutes
Alright I've got the chocolate chips almost completely melted
I've turned the temperature down to a simmer
You want to keep it low, really low. We don't want the chocolate to be super hot
Okay so we are ready to start dipping
So we've got our strawberry
All you do is put it right in there like that
And I like to leave some of the red showing
So that it looks good, it's a nice contrast
And just set it on your parchment paper
I have parchment paper here or you can use waxed paper
I like to hold up the leaves so the chocolate doesn't get on the leaves
And you can even tip up your pan if you want to
To get it deeper and you can just stick in right like that
You can cover as much or as little as you want
Now I am going to do Bob the Bionic strawberry
I am going to have to tip my pan up because he is really large
And I want to make it as deep as possible
So I'm just twirling him in getting as much covered as I want
There you go. Still dripping a little
So I do want to mention at this point that I've turned the heat off of the chocolate
Because it's hot enough, it's melted. That's all you need
You don't want to keep the temperature to high
Those look fantastic!
So now that I've got all the strawberries covered in chocolate
We want to put these in the refrigerator
Until they are completely cold before we put the drizzle of the white chocolate on them
So I'm going to put these out
So now it's time to do our white chocolate drizzle
I just took the strawberries out of the refrigerator
They have been in there about twenty minutes
You can see it's all gotten very firm
The chocolate is not soft anymore
So we are ready to go back to our double boiler
I've got the flame on low and I'm going to add my white chocolate chips
And I'm going to add about a teaspoon or so of shortening
And I am adjust that depending how thin it gets
We are going to do the same thing we did last time
We are going to heat this up. Once the chocolate starts to melt
And gets melted I'm probably going to turn the heat off
Because I don't want it to thicken up
Okay so we have our chocolate here
Nice and thin, now I want to show you the consistency
When I hold up my spatula you can see how it just drips down
In a nice little stream, ok
So in order to get a nice good drizzle on our strawberries
I'm going to take a toothpick
This is going to help me hold on to the strawberries
I'm going to poke it right through the stem
Just so I can get a grip on it
Now I've got something to hang on to
Now I'm going to pull the leaves back. Sometimes they get in the way
I'm going to hold the strawberry like this and the idea is
The best technique I've found is to hold up your stream
Like this and run your strawberry underneath it
So here we go, let's give this a shot
Just go back and forth. Whatever you think looks good
Now I think that looks pretty good
And we'll just set it down and do our next one
Let's do that one more time so you can really get the idea here
Alright so I got my stem, my toothpicks in there
Now I'm going to drizzle and just go back and forth
Just like that
It looks very nice and professional that way
Okay so there you have it
Homemade chocolate strawberries
Now this whole batch with the one package of chocolate chips made about 36 strawberries
So you can make quite a few. You want to store them in the refrigerator
That way the strawberries will last longer
But you do want to consume them within a day or two
So anyway I hope you enjoyed this video

because I love chocolate

I personally like to use Guitard chocolate chips
