We often make pakoras. When we have guest arriving or for supper or when
it’s raining pakoras can be prepared very quickly and served with ease.
We use many things for making pakoras like cauliflower, potato, eggplant (baingan) etc.
Today we will make pakoras of ridge gourd (tori).
Let’s see what ingredients are required to make tori pakoras.
Ridge gourd (tori) - 2
Gram flour (besan) - 1 cup
Green coriander - 2 tbsp (finely chopped)
Ginger - 1 inch piece (grated) (ginger paste)
Green chilly - 2 (finely chopped)
Salt - ½ tsp
Coriander powder - ½ tsp
Red chilly powder - ¼ tsp
Oil - to fry pakora
Firstly prepare a mixture of besan. Add little water in besan and stir till all lumps get dissolved.
Prepare a thick mixture of besan so that the tori pieces get coated well.
Beat the mixture continuously for 2-3 minutes like this so that it becomes soft.
For 1 cup besan we have used ½ cup of water.
Add green chilies, ginger paste, salt, coriander powder, red chilly powder and green coriander in the mixture.
Mix all ingredients well. Besan mixture is now ready.
Now peel the tori and slice in to pieces.
Remove the stalk from both the ends and peel the tori now.
Meanwhile heat the oil.
Slice long pieces of tori.
Beat the mixture well to have good, fluffy and crispy pakoras.
It should have thick consistency.
Oil is heated now we will fry the pakoras.
Take one piece of tori at a time and dip it in the batter. Coat it very nicely with the batter.
Now gently place it in a pan.
Oil should not be very much heated. Keep it medium hot.
Fry as much pakoras possible at a time.
Cook till they become golden brown.
Like wise prepare all the pakoras.
Take out the pakoras in a plate.
Piping hot tori pakoras are ready.
