There's this saying that if you know, it tastes bad its good for you or if it tastes good
its bad for you - but one of the areas that we teach in food science and technology at
Curtin and then if you do research later on in your career is to how to actually design
foods that are both good for you, nutritious, and have health benefits, but also taste really
good and that will be acceptable, you know, in the supermarkets and people will buy them.
Because there's no point having a healthly food product that no body will eat.
Food scientists need to have broad knowledge. So people who want to know everything from
genetic engineering to about climate change, about food security, about making healthy
food they're the sort of people we really want.
No, I didn't know what would happen when I started food science but once I did I saw
that you could go into research, you can go into quality assurance in all the food industry,
there's multiple paths you can go down.
I got into food technology because I liked food and working with food - not cooking - but
just developing new products and it came around that I got this jobs around the world!
A food scientist is really important from the point of view that even if you're doing
a clinical health study you may need to be developing products for that study. You've
gotta understand processing, you have to understand the chemistry, the physical properties of
food and how they interact.
A food scientist is first and foremost a scientist. So its really important to remember that food
science is based in chemistry and biology and physics but it's using that in a really
interesting way to understand what foods are. If you design new products you can actually
see them in the supermarkets or see people eating a healthier product such as say a low
salt product.
The international connection is really important to our research so many of our students do
work over seas.
The jobs around the world for food technology, jobs around the world are not filled. So even
any Curtin graduate can go any where in the world and get jobs, because there are so many
jobs available! Any company that makes food, or food product, you go to the supermarket
if that's a food product, a food technologist is behind that product.
Food sciences is very interesting field that not many people do, and its something that
is of great concern in the future you're guaranteed to get a job in a variety of areas you're
not limited to just one and they're all interesting and exciting jobs
