With Halloween just around the corner, there are plenty of ways you can make your spooky holiday
preparations more sustainable. Let's take a look at everybody's favorite - PUMPKINS!
In my house, it's tradition to carve at least one pumpkin every year. While most of us have
focused on the outside of our Jack-o-lanterns, the insides have several uses of their own.
This year, as your family gathers around to carve their pumpkins, there are three things
you may want to keep in mind. First, the guts of the pumpkins are rich in nutrients. Rather
than tossing them in the trash, think about composting them instead. Sure they're slimy,
but they can really add a boost to your flower beds in the spring. Second, if you have a
vegetable garden, save a few of the biggest seeds to grow your own pumpkins next year.
After you wash them off, let them air-dry for about a week. Put them in an air-tight
container in a cool dry place until spring. With any luck you won't have to stop by the
pumpkin patch next year! But the tastiest thing to do with your pumpkin seeds is roast them.
The seeds are packed with iron, magnesium, fiber and protein, making them one healthy
snack. Wash all the guts off your seeds, dry them well and spread them in a single layer
on a cookie sheet. Drizzle them with olive oil and sprinkle with a little salt before
putting them in the oven at 300 degrees for about 45 minutes. As you can see, it's not
