Its weekend.So I thought to come with a small recipe
I came today with a chutney recipe,which goes well with idli,dosa etc
Some followers have requested me to share some recipes of variety chutneys
So,dears,please do try it at home.And do like and share
Let's see how to make roasted gram dal chutney,without wasting time
Its a LULU brand roasted gram dal.In the packet they've written,roasted gram
Hope you all can recognise roasted gram by seeing them
Channa dal has a dark yellow color d thick texture while roasted gram has an off white or light yellow colour
If you don't have this roasted gram with you,you can prepare the same chutney using peanuts
Instead of roasted gram,fry the peanuts well before making chutney with it
I've taken almost 3 tbsp of roasted gram here
We need to fry some gram dal as well as some urad dal before making the chutney
Take a pan and add 1/2 tsp or less amount of gingelly oil
Add 3 tbs of gram dal into the oil
I always fry each items separately.Some people used to fry all the ingredients together
Frying time required for each item varies from one another
So for every recipe,like sambar powder,I used to fry the ingredients one by one
If you are able to fry the items together,just do like that.No problem
In medium flame roast it well till the raw smell goes

I've been getting requests for some variety chutney recipes for idli and dosa
So I thought to do this small recipe for you all
When it is roasted well,a nice smell will come and a small color change can be seen
We are quite familiar with the peanuts available in the beach side
There are 2 types of peanuts available.Its from the beach side,I ate it for the 1st time
Both roasted gram and peanuts were available at the beach side.I like it very much
When I get this smell I used to remember those beachside
Its fried well now.Its enough
Keep it aside
Into the same pan,add 2 tsp of urad dal
Don't confuse with the amount of urad dal.Its 2 tsp not tbsp
Saute it well till it is cooked well
It needs very less time to get roasted well
This is also done.Keep it aside
Add 4 shallots chopped into pieces
If the shallots are large in size,add 2-3 accordingly
Add some drops of gingelly oil
Do not try these recipes in coconut oil,which makes a naadan flavor to the dish
These are all Tamil style recipes.So always add gingelly oil or atleast sunflower oil in such recipes
Kindly avoid coconut oil in this recipe
Add 3-4 fenugreek seeds into it
Its only for a flavor we are adding fenugreek seeds in this recipe.
If you add more fenugreek seeds,the chutney tastes bitter.So do not add more than 4 seeds at a time
When it is hot enough,add some grated coconut
Add 4 tbs of grated coconut
Add 2 -3 dry red chilly (adjust it with your taste)
I've added 3 dry red chillies.Let it also roast well with the coconut and shallots
Roast them well in medium flame
Do not make the coconut into a dark brown shade.The raw smell shold not be there.And that's enough
If it turns into brown shade,it gives a different taste to the chutney
Add 3-4 curry leaves and saute them well
I'm not adding ginger or garlic in this chutney.If you prefer,you can add them according to your taste
In my opinion,they are not required for this recipe
You can fry the red chilly alone like we fried the dal in the beginning
You can also fry it directly from the fire.It also tastes good
The raw smell of the coconut is gone and the red chilies are roasted enough
After cooling,let's grind these all together
They all are cool down well.Now grind it all in a mixie
Carefully add some salt
Add enough water
We have to add curd into this chutney,after grinding it for some seconds
Grind it first with a little water and we can grind them all well with curd
Its just grinded.Now add curd into this depends on the sourness of the curd
I've added 2 tbs of curd.Let's see after grinding
This is the consistency I got after grinding
Let me check the taste
Adding some more salt and a little water to make it into the perfect consistency
Add a pinch of sugar,which gives the perfect taste to the chutney
Grind them well once again after adding the water
We can do the seasoning after that
If you feel like to add more chillies,just roast 1 or 2 dry red chillies and add them into this chutney and grind them well
This is perfect for my taste.So I'm not adding more chillies
Decide the spice level based on your taste
Its ready now.When I checked the taste,its really yummy
This is the consistency I prefer.If you want you can add more water to loosen the thickness
Now let's do the seasoning and add them into this chutney
Season with some mustard seeds,dry red chillies and curry leaves in gingelly oil and add them into this chutney
Mix well the seasoning with this chutney
Do the seasoning in gingelly oil,which gives you a restaurant style taste for your chutney
So the roasted gram dal chutney is ready now
You can do this with roasted peanut also
