Now we're gonna be using a mango. Gonna show you how to clean this and prepare it. Feel
free to substitute frozen fruit if you don;t have the fresh fruit available. For your recipe
its perfectly acceptable. Of course its not gonna taste exactly the same. I think its
better to have something than not at all. Now, with the mango here, all you need to
do is using a small pearing knife, is follow the fruit, like so. You peel it towards your
thumb. Be sure not to cut off hyour thumb. Now this is tricky. Once you start peeling
it and your hands are on the fruit and your hands get slippery, so you gotta be careful
on how you hold it. But you'll see it comes off very quickly. In just a few seconds we
have a completely peeled mango. I don't think you would see this on network TV, people peeling
a whole mango. We need to get the meat off. The thing to know about the mango is that
the shape of the seed is rather long and flat. And so you cut along the length of the fruit
like that and you will start to see there's a little bit of this pit still available.
We're going to cut the other side like that. And then all you need to do is just keep cutting
off little bits of fruit. It doesn't matter. You just want to get as much fruit away from
the center pit as possible. It doesn't have to be pretty pieces. And as you can see we've
got about as much fruit off that. This is what the pit looks like, this is our fruit.
And we will cut it into chopped courses ready to go into food processor. This gets thrown
away. And thats how you prepare mango.
