Now I have been having a jolly time for a couple of days, camping here in the woods.
And my friends, the gamekeepers here on the estate, they have come to join me. I have
got my little encampment, I light the fire, its great. After a little improvisation in
the way of furniture, the boys are feeling right at home, and I can set about starting
a fire. Agaisnt the boys advice, I'm going old school, and just using pine shavings and
a flint and steel. Scrap away, and these scrapings are full of residue, and lets see if we can
get this going. Oh ye of little faith. I'm amazed. Hey presto! With the fire cracking
away, I can set about preparing the venison for the barbecue. So, first dish that I am
going to cook, we have got some chops of fallow deer here, these are T-bones. I'm going to
take, the sinu off the back. I'm going to do 4 of these, because every body forgets
in these programmes that there is not just the blokes in front of the camera, there is
the bloke behind the camera, isn't that right? Yes, exactly! So we have got to cook for everybody.
A universal spice mix, which is black pepper, salt, fennel seeds, cumin seeds, and it has
got an amazing aromatic smell. I'm going to first of all pour a little bit of olive oil
on them. This is olive oil mixed with vegetable oil. There we go. Here we go, now the big
sprinkle, and turn, and on again. Next, the big cheat, I have here some curry paste, you
can use any you like. Curry paste like this, makes a fantastic marinade for our fallow
deer. Simple as you like. I have got in here some cherry tomatoes and some spuds, some
leeks, onto this we need some oil. Some of my spice mix, there we are, and importantly
with my lemon, there we go. There we go, they will be absolutely lovely. Whilst the vegetables
are roasting, and the T-Bones are marinading. I have got a few more meals up my sleeve,
and I have set about preparing a full roebuck hall. First cutting off the fema bone, for
a more even cut. After that I will follow the muscle definition, to create separate
cuts from each muscle. That is another meal. This will do 4 people, and I am going to start
opening it up, so that the meat is all the same thickness. Brilliant. Then I will take
that tactical spice mix I made up earlier, and crush some coriander seeds into it. Pour
the oil onto that meat to add the spice. Finally, some hot chilli sauce, and gorgeous local
honey. Massage this aromatic mixture into your meat, and there you go, another fantastic
meal for the barbecue, but right now, the fire is crackling away, and i need to get
those marinated t-bones on the grill for my chums. They look nice. You like the look?
Yep. There we go, we got some good flame going on underneath, they are sizzling away nicely,
they wont take long to cook, I think they will take about 10 minutes, 5 on each side.
Thank you Mr fallow deer. Now lets have a look at these, oh you beauty. Not burning,
just colouring up. Right here we go. Ok, we are going to put some parsley in here, now
lime. Ok now I am just going to put two of these chops on the plate, there we go, and
some of this. Gorgeous mixture here, and that, as they say, is that. Foil baked spuds, tomatoes,
with olive oil and leeks and parsley and lime juice. Curried spiced fallow chops, cooked
to perfection on the barbecue. Lets eat. There you are my friend. Cheers boy, lovely. Bit
of luck these will be pink all the way through, but fully cooked. Look at that. Pink, but
fully cooked, and that is lovely. Corr. When you mix it with a masala sauce like that,
