I’m Bill Telepan, executive chef for Wellness in the Schools. Our goal is to bring healthier
lunches to the school cafeteria … and one of our most successful dishes has been a vegetarian
chili. We love beans and we use three different kinds in that chili. But beans can be tough
to get right, so here are some tips:
First don’t let the pot boil. Roiling or bubbling water will cause the skins to pull
away from the beans and they’ll cook unevenly. Next, don’t salt the beans when they are
cooking. Beans are best when they’re soft… but they won’t soften if you add salt. Finally,
resist the urge to stir. Stirring breaks the beans into pieces.
Beans are a great meat alternative, because they’re an excellent source of protein.
Use these tips, and enjoy some beans with – or as – your next meal.
