Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on
behalf of Expert Village I'm here to show you a crawfish boudin. So here we have our
final product our crawfish boudin, it's very spicy. We used crawfish and rice, we made
a crawfish and rice dressing where as traditional boudin normally uses pork. So what we did
is cut up our holy trinity, cut up some Serrano peppers, some green onions, parsley, we sauteed
our crawfish and then added that holy trinity into the pot. Then we added our pepper in
there, we added a little bit of flour to thicken it and keep everything solid, we added some
tomato sauce. Then we added some water to let it simmer for about 20 minutes so everything
can come together, those flavors. Then we took it out we mixed it with our rice, added
our parsley, our green onions to it give it a good mix of course we seasoned it. We gave
it a good mix, sent it through our grinder, we prepared our casings, stuffed into the
casings here you have it, crawfish boudin.
