hi welcome to Spanish Cooking
today will prepare pisto, a vegetable stew that can be served as a side dish or as a first dish
it is really easy to do
so let's go. You wanna cut in halves your zucchini and then in quarters
and then will get small cubes or slices
it doesn't matter as you prefer i like it rather small
and important thing is that you will get
somehow regular pieces, right? regular thickness
then you will do the same with your green peppers
so you cut them in halves and in quarters and then
to wanna make small slices
you'll do the same with your red
bell pepper so you've cut them in
in strips and then in slices yeah. once you're done with your peppers
you wanna do the same with your onion. I also like it
rather small, and finally
you will proceed with your tomatoes now
you wanna make a crosscut on the top and submerge your tomatoes
in almost boiling water for about
thirty-seconds not more that's enough
for removing easily the skin as you will see
the skin will be really really easy
to be taken off so now
as you see here with your knife just
peeling it it's really easy, so it's a nice trick
you wanna do the same you cut your tomatoes in half to
take out this *** part and then
you will get some caps now you're done with your ingredients
so in a pan you wanna heat a couple of olive oil tablespoons
medium, medium-high heat and you will start with your ingredients
step-by-step stepwise this is the trick for getting a very tasty and nice pisto
and you will start with your onion because it takes longer
to be cooked it's important to add some salt at this
moment it helps the onion to be cooked
so after for to 5 minutes you can add your peppers
the green and also your red pepper
and you will keep steering for about
5 to 7 minutes it will depend on the amount and
on the heat yeah; and after these
you can add your to Zucchini. They will take shorter time
to be cooked. Give it a stir
Add a bay leaf, it will provide a very very nice
flavor and of course a teaspoon of sweet paprika
it will provide to the pisto a very nice smoky flavor
it's really nice is like the Spanish flavor
So now
you can add your tomatoes your diced
tomatoes; you will
reduce your heat to medium medium-low and you will
cover. You will keep cooking it for
10 to 12 minutes it will depend yeah until they are soft
in the meanwhile you wanna grate
one tomato. Yeah I know we added
tomatoes already but this will be like
a tomato cream or tomato
puree. It will provide
liked another texture, a creamy texture
so just cook it for about 5 more minutes
it's important to add now some sugar
if you want to take-off some of the acity of the tomato
and also if you want finally you can add one egg
one beaten egg with some salt just two
have a more reach
pisto but it's up to you is not necessary. so I like to add
my egg in the very
two last minutes not more otherwise it gets
to dry just give it a stir and your
pisto is done! if you want you can also add some
tuna fish or serve it with bread or
as you like; just garnish with some parsley
and of course don't forget to enjoy it! see you soon!
