Hello! Welcome to Archana's Kitchen.
The winter season has arrived and we now see fresh green vegetables in the market.
First of all, thank you very much for the wonderful feedback from all of you.
I have received lot of requests to teach to make Palak Paneer.
So we will make Palak Paneer or Spinach and Cottage cheese gravy.
So stay tuned to Archana's Kitchen.
Let's see the ingredients needed to make Palak Paneer.
A bowl of spinach paste. A bowl of ground masala made of ...
...onion, ginger, garlic, black pepper, cinnamon and cloves.
This is the composition of the masala. 2 green chillies.
50 grams of Cottage cheese. 1 tablespoon cream.
Salt to taste.
Oil. Water.
Let's start cooking. The first step is to heat some oil.
We will take one one and a half tablespoon of oil.
While making Punjabi dishes like Palak Paneer, whether we use oil...
... clarified butter, cream or butter, the quantity needed is more than usual.
For the tempering we have 2 green chillies. Let's put them in.
We have taken a ground masala here. I shall repeat once more.
It's ingredients are onions, ginger, garlic, cinnamon, cloves and black pepper.
We have to stir this for a while.
Add some salt to taste.
We have to let this masala cook because we have put raw onions in it not cooked ones.
We have ground it coarsely as well.
Don't grind it fine. We have some spinach paste here.
To make the spinach paste, the first step is to boil some water.
Take just the spinach leaves not the stalk.
Wash and clean the leaves and then put them in boiling water.
We shall remove from the boiling water in 2 minutes and then dip in cold water.
This stops them from cooking further and the spinach leaves retain their green colour.
You can store this paste in the deep freezer for 2 days.
Let's add some cream now.
We have 2 tablespoons of cream. We will add a bit now and some while garnishing.
You may take butter and oil both for the preparation in equal quantities.
When we cook the masala intially the aroma is different and then...
... as it gets cooked the oil seperates from it and the aroma also changes a lot.
Now that this is cooked we shall put in the paste of blanched spinach leaves.
We shall add some water in this and cook it.
Let's add some water.
We shall now add the diced cottage cheese.
We need to cook this for about 5 to 10 minutes.
The Palak Paneer is now ready.
We shall now put off the stove.
Now we need to trasnfer the contents into a serving bowl.
We will garnish it with a bit of cream.
Nice and hot Palak Paneer is ready to be eaten with hot chapati or paratha.
