Let's make octopus with rice.
Octopus with rice is one of the most typical dishes of the island of Ikaria, but also Paros, Samos and other Cyclades islands.
First, peel and slice the onions.
Then wash the octopus well and cut the tentacles off.
Place the octopus and onions in a saucepan and sprinkle with extra *** olive oil and some water.
Add some fresh or dried oregano, and cover the saucepan with the lid.
Boil the octopus on low heat until tender.
Add a little nutmeg into the saucepan.
The nutmeg is a spice with an aromatic, penetrating flavour and a strong -almost sweet- taste.
Add the Santorini tomatoes and the rice.
Add some salt and pepper and some more water too.
Cover the saucepan with the lid and allow it all to simmer together.
Serve while it is still hot, as a main dish.
