Today,I am going to solve a problem of yours. We will talk about bhendi (ladyfinger).
When we talk about ladyfinger we get tense. Will it become sticky? My son does not like it. My husband does not like it.
It does not become crispy. It does not become non-sticky enough.
But there is 1 tip, if you watch carefully, then the bhendi will turn out well, it will be crispy.
Now, let's look at the ingredients.
I have cut the ladyfinger long and straight from the centre. Some even cut it circular. You could chop it either way and it will still be non-sticky.
1/2 tsp mustard seeds, 1/4 tsp asafoetida, salt according to taste, 1 tsp red chilli powder, 1/2 tsp turmeric powder
3-4 kokams, coriander for garnish and 2-3 tbsp oil.
Ok, so let's start to make the ladyfinger.
First we will heat 2-3 tsp of oil.
While making ladyfinger we use a little extra oil as compared to other vegetables. The oil has heated, so we will now make the tadka.
Add 1/2 tsp mustard seeds, 1/4 tsp asafoetida, 1/2 tsp turmeric powder, 1 tsp red chilli powder or any other spicy masala you may have in your house.
Little bit of coriander and then add the chopped ladyfinger.
And here's an important tip. Add 2-3 kokam. This will ensure that the vegetable does not become sticky.
Even if you don't have kokam, you can add lime juice, to avoid stickiness. Lastly, add salt according to taste.
While mixing it together can you see any stickiness while mixing? No!
This is because when you cut the ladyfinger in circles, the stickiness becomes apparent. But when you cut it long there is no stickiness.
So there are 3 things you need to keep in mind. First, use a little extra oil. Instead of adding regular 2 tsp of oil, add 3 tsp.
Second, add kokam and third, cut the ladyfinger straight or long.
If you keep these 3 things in your mind while making the vegetable then everyone at home will also be surprised, that it is tasting different this time.
The vegetable is ready now, let's serve it.
Turn off the gas. The vegetable is not sticky. Let's garnish it with some coriander.
So the vegetable is ready. Also remember to not put a lid over the vegetable while cooking it.
While making any vegetable we tend to cover it, add some water and let the vegetable cook over steam.
However, when making ladyfinger, if water drops fall, it will become sticky.
