Hey Guys, I'm Alejandra Ramos and I'm Caroline Wright and today we are making Peanut Butter
Chicken Mole. I recently got back from a trip to Mexico
where i had the most amazing Mole, so when i get back i like to extend my vacation by
recreating the dishes i had while i was there. So, this is my little twist using The Heat
is On Peanut Butter, Smart, Its so good, its spicy adds great flavor.
So lets get started, ok, just gonna do a little bit of Olive oil, right in my pan here, Can
you hand me those Onions please, some Onions and some garlic cause you know
we wanna add a lot of flavor to this..Iv got a lot of garlic in here, so this just kinda
goes into the oil and you just wanna let it go for about a minute or two, just until it
gets fragrant. So once people are like "Hey, something smells
delicious, that's when you are ready to move to the next step.
Oh, it smells awesome, nothing better than onions & garlic.
Onions and Garlic are the most perfect scent. Agreed, ya
A perfume would be nice i think, what do you think? Can i actually get a tiny little pinch
of the Salt..And now we can actually go ahead and get those other ingredients. So these
are fresh plum tomatoes, these are just right from the can, nothing super fancy.. Yea i
like to keep it easy!.. So iv got a little bit of cumin right here..I
see you've got some may be, cocoa, yea So iv got some cocoa powder, Ok . That is super
key for Mole, it's a really traditional ingredient for Mole, adds a little bit of sweetness and
spice and just that deep chocolaty richness!..I don't recognize this one.. That is espresso
powder, just gives a little kick, like the kick you get in the morning, it adds that
kind of a kick to the dish!..This is cinnamon..Alright, it is kind of like a savory dish but its got
these sweet elements to it..We have some honey here, Yes, this is great..The tomatoes are
pretty acidic, so the honey kind of cuts it all out..You promised me some peanut butter,
I did!,..that's like the best part, So The Heat is On is super spicy and amazing!. This
adds tons of flavor and heat so we are not even using any other chilies, all the heat
is coming right from here..That's such a good idea..Ya.. it works really really well..This
is Good!.I am generous with it!.. That's a good dollop!..Yea so you just work that in
let the heat from the sauce kind of melt that peanut butter..It's getting like nice and
thick and it smells incredible!. so iv actually got the chicken over here..using chicken thighs
and chicken legs and what's nice about this is that this is the dark meat chicken, it
can cook a little bit longer and becomes really tender..and i gave this a little bit of a
sear, so its nice, gives it a little bit of color and extra flavor. But if you are in
a hurry you can totally skip that..You wanna go ahead and put those in here. Yea absolutely..Just
nestle them into the sauce and just you don't want them to overlap.. Now we add the chicken
broth, it depends on the size of the pan how much broth you are going to end up using..
So this is pretty good..So its going get a nice braze going, and now we are just gonna
let this simmer for about 30 minutes.. You can cover it if you want, but its you know
fine like this too.. So this has been simmering for 30 minutes and it is amazing, so good..
You can really smell that Peanut Butter.!. So, i am ready to plate if you are ready to
eat.. Get some of that delicious Peanut Butter Mole sauce on there..This is so good.Wanna
garnish this up with some salted peanuts, to add a little finishing touch here.Brings
out the peanut flavor, it heightens that perfect peanut butter flavor.. That's creative, i
