Today , we are making "Noodles with Peanut Sauce".
For the peanut sauce, boil 1/2 cup of water in a small pan.
Add the jaggery.
Add the peanut butter.
Add the tamarind pulp.
Add salt to taste.
Mix well and simmer for a few minutes or till the jaggery melts and the sauce thickens.
Add the soya sauce.
For the noodles, heat the oil in a broad non-stick pan.
Add the spring onion whites and sauté on a high flame for 2 to 3 minutes or till the onions turn translucent.
Add the shredded purple cabbage.
Add the bean sprouts.
Add the carrots.
Add the cottage cheese cubes.
Sauté on a high flame for 2 to 3 minutes.
Add the boiled flat rice noodles.
Add salt to taste.
Mix well and cook on a high flame for 2 to 3 minutes, while stirring occasionally.
Add the prepared peanut sauce.
Mix well.
Add freshly ground pepper to taste.
Serve immediately garnished with spring onion greens.
