Hi I am chef Amit and I have a patisserie in Mumbai, Bandra by the name Love and Cheesecake. And today we are going to make Key Lime Pie. So keep watching.
To make Key Lime Pie we will need 200ml cream, ½ cup cookie crumbs, 5 nimbu (lime), 3 egg yolks and 400ml milk maid, which is readily available in market.
And this key lime pie is very simple to make and it's a very innovative recipe. You just have a look how easily we make it right now.
So the first thing we need to do is whip the cream, which I have already cooled.Warm cream tends to curdle when whipped.
So lets starts, the process of making Key Lime Pie.
Here we have the whipped cream ready, and it has a soft peak consistency. We have to get it to soft peak consistency only, as over whipping will give us problems when we have to set the cream.
I am now going to leave it in the refrigerator for cooling.
And until then we will whip the egg yolks. Here goes the egg yolk.
When we are whipping the egg yolks, they should attain a good fluffy consistency.
And it whips well. Because if the yolks are not fluffy, key lime pie will not get the volume.
Here, the egg yolk is ready, and it's fluffy.
We need the yolks to be in a ribbon consistency, and it's now ready.
And now we will add the lime/ lemon zest into the whipped yolks.
Whenever extracting lime zest, ensure only the outer layer is grated. The white/inner layer of the lime is sour and spoils the recipe.
And as you can see we are not using sugar in this recipe, because we have milkmaid, which is already sweet.
So the sourness and sweetness will get balanced. And milkmaid will also give thickness to the mixture.
Now mix it well, and our yolk and zest mixture is ready.
And it's time for the lemon juice. We will squeeze out the juice of the lemons of which the zest we just extracted.
And now I will need the whipped cream, that will go into the yolk mixture.
Once all the cream is transferred, we will now fold the mixture together.
And now we are adding milk maid into the mixture
And now we are going to add the lime/ lemon juice into the mixture.
The lime/ lemon juice goes in last into the mixture, because if you will add it into the cream, chances are that the cream will curdle.
Our Key Lime Pie mixture is ready and we will now set its base. and for this I will need cookie crumbs.
And I am going to place the Key Lime pie into these 2 fancy glasses.
Now we will add the cookie crumbs to give a base to the Key Lime Pie.
Now that our base is ready we will now add the Key Lime pie mixture into the glasses.
For which I am using a piping bag, you can also use a spoon to pour it into the glasses.
So now our Key Lime Pie is ready
Our Key Lime Pie is now ready to go into the refrigerator for 3-4 hours to cool and thicken.
