To select a Chinese eggplant, find an eggplant that's got a nice purple color to it. The
color and shade can vary, it can be a light purple all the way to a very dark purple.
Also you'll notice a lot of times there's white around the top of the eggplant, and
that's okay. Also when you're selecting an eggplant, you want to find the stem. The stem
should have some green to it; the greener it is, the more ripe it is. The flavor of
a Chinese eggplant can be a little bit less bitter than a regular eggplant, so a lot of
people prefer using Chinese eggplant over a regular eggplant. And that is how you select
a Chinese eggplant.
