Hi you guys, it's Laura here with http://www.womens-fitness-tips.com. I recently bought myself a Vitamix and I have
to tell you, it is the best thing to have in the kitchen if you want to eat healthy.
I'm absolutely obsessed with it. Today I'm going to show you how to make a delicious
chicken salad served over quinoa. I made my quinoa earlier today in the rice cooker and
this is what it looks like. Quinoa is a really great grain because it's really high in protein.
It has all nine essential amino acids, it's also high in fiber and it goes well with so
many things, so really buy quinoa and make it just like rice, it's really simple to make.
It's like one cup of quinoa and two cups of water, put it in the rice cooker or on the
stove top, it cooks the same way.
Okay, so this chicken salad is really really simple. I have a cup and half of cooked chicken,
and I just loosely chopped this chicken, as you can see. It was just grilled the other
night, and I had some left over, and I didn't know what to do with it, so I figured I'd
make some chicken salad. And then, also, I'm using about 7 to 10 baby carrots, about a
half a cup of chopped scallions or you can use onion if you want, two stalks of celery
loosely chopped, and then when we're done with this I'm going to add a little bit of
light mayo and if you want some Dijon, its kind of tasty and some salt and pepper.
So you just take your chicken and put it into the Vitamix and then process it on variable
1 to 2, just until it's chopped the way that you like it. So let's just chop this up. See
how fast, it's amazing. So I'm stopping it right there. Take it out and put it into your
bowl. Then add the other ingredients into the Vitamix...carrots, onions, and celery.
Done! Same thing, process that on Variable 1 to 3 until it's chopped up. You don't want
to chop it too long because then it gets mushy. Just finely chopped. Add this to the chicken.
You have a lot of really good veggies in there! Mix this together. Add a tablespoon or two
of the light mayonnaise, stir that up. Now add some mustard to it, a teaspoon or to taste.
You can kind of play around with the recipe to see what you like. Then add some pepper
and Himalayan sea salt...the best! You don't need a lot because the chicken is kind of
salty already. That's it, you're done. If you want, you can add some cranberries, raw
walnuts, or some diced apple. It just depends on how savory or sweet you like it. So, that's
it! The recipe only took a couple of minutes. Now just take the chicken salad and take the
quinoa and you can serve it right over it. This makes enough for two or three days. You
can also make a sandwich with it if you like using spelt bread. Enjoy!
