My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to
roast a traditional Christmas duck with red currant jelly sauce. Today we are going to
need one 5-6 pound duckling. I got this at the local butcher shop it's a pretty good
size duck this is actually right about 5 pounds, so that should work out just right. We are
also going to need salt and pepper like always two things you almost need for everything.
We are also going to need an onion I got a yellow onion here you're going to need one
whole onion pretty much for every 5 pounds of duck that you are doing. So for a 6 pound
duck maybe a little extra depends on how much onion you want to use. We are also going to
need some 1 cup or 8 oz of red currant jelly you can buy this at your grocery store already.
It's easier than making it yourself for certain and we are just going to use this to make
the sauce, we are also going to need 1 lemon or you can do lemon juice if you like. But
I prefer to use fresh lemons because you squeeze it right out of them and it's the stuff in
the bottle you buy at the store never taste quite right to me. With that let's see what
equipment we are going to need for today.
