Hi! This is Dave for Expert Village. Today we are going to make Eggplant Parmesan. Okay
now I am going to show you how to prepare the eggplant for putting into our recipe.
Okay you see we have a stem at this end with some leaves here. It is going to be tough
in here anyway so let's just go ahead and cut this right out and set it aside. And here
is how we want to peel it. You can use a paring knife, a vegetable peeler which is what I
prefer to do and just start at one end and just do like you would do a potato. This will
be bitter if you leave it on. Some people do depending on what kind of recipe the4y
are using it for. So go ahead and pull this off and just continue going around it till
we get all of that off. Peels will go well in your compost heap as well.
