Hey everyone, it's Tara Stiles, and welcome to Livestrong Woman. So today, I'm going to
show you one my favorite, really simple, easy to make, and really healthy kale salads. If
you've been having a little bit of indulgence over the new year and all this, it's really
great to sort of detox, and it also just tastes amazing. So you're gonna need some kale. Make
sure you wash it up. And you're gonna need to massage this kale a little bit so it kind
of shrinks down a bit. So we're gonna squeeze some lemon over our nice kale here. So, I
like lemon so I always, you know, over do it on the lemon, and it's all good. So I squeeze
it in, and then just kind of give it a good rub down. Get friendly with your kale. And
as you can see, it starts to get a little bit softer, a little bit less volume, and
a little bit more manageable to eat. So there we go. And it's starting to smell amazing
too. So we've got our kale massaged. Don't be shy. And we're gonna chop up some celery.
Again, add some nice crunch. So, here we go. And then we have some bell peppers. I love
bell peppers, and I love to eat bright colors. So we've got some red and green and orange
all going in there. And this is also something you can make and store in the fridge and eat
it throughout the day. You can have the whole thing for lunch, and then you can have maybe
a little bit on the side for dinner. However you like it there. So a couple different ways
that I love to eat this salad: One, is just straight up, you know, simple like this and
then I'd squeeze, you know, a little bit more lemon on this. And then that's amazing. And
a little bit of crushed red pepper flakes make it even more exciting. So there you go.
If you really can't live without salad dressing, I have a really simple, easy to make salad
dressing that is also pretty darn good for you. So it's just balsamic vinegar. And you're
just gonna need a little bowl. So pour a little bit of your balsamic in there. And then any
dijon mustard. I have some Grey Poupon today because I thought it was funny and thought
it was exciting to get the Grey Poupon -- it's very fancy. So, put the Grey Poupon in with
your balsamic. Stir it up there until it gets all mixed up. You know, you can add a little
bit more balsamic if you like. But just stir it until it actually looks like the consistency
of salad dressing. So, we're just gonna pour this on here. And again, start with a little
and then add more later if you really like it. But again, this salad is perfectly good
without the dressing. And, gonna mix this up. Make sure we get the -- all of the dressing
spread in there, if you're using your dressing. And I can't wait to try this because, again,
this is one of my favorite salads. So I'm just gonna use one of our bowls that we had
from here. A little bit of kale. Make sure it's mixed up so you can get all the other
chopped goodness in there. And look at that. Amazing. So good for you. You're gonna love
this salad. Have friends over. Make this, and they'll say, "Wow, it's great." So good.
