Hi, I'm chef Donn and on behalf of Expert Village, welcome back. Today we are going
to be making a Merline crab cakes. We'll have a little twist on it a little southwest twist,
but these are very good. You use fresh or can crab meat. I use the crab meat out of
the can (the lump) which is totally acceptable. These are the ingredients we'll be using today:
a couple of eggs, celery, carrot, onion, lemon, a couple of slices of bread (prefer whole
wheat), our crab meat, this is lump crab meat (very good), pimentos, butter, whole bay seasoning,
stone ground mustard, mayonnaise, salt, pepper, and heavy whipping cream. We are going to
saute these and top them with our roasted red bell pepper cream. It's very good.
