Today we will make chapati from multigrain flour.
This flour is rich in calcium, iron and minerals.
Multi grain chapati is not only tasty, it also give us a lot of energy.
So let’s start making chapati from multi grain flour.
Wheat flour (Gehun atta) -1 cup
Millet flour (Bajra atta) - 3/4 cup
Besan - ¼ cup
Soya bean flour - ¼ cup
Corn flour - ¼ cup
We have taken these 5 types of flour.
Ghee - 2 tbsp (To be applied on the roti)
Oil - 2 tbsp (To knead the dough)
Carom seeds (Ajwain) - ¼ tsp
Salt (Namak) - ½ tsp or as per taste
To make Multigrain roti, the first thing that needs to be prepared is the flour.
Put the wheat flour in a big bowl.
Add millet flour, besan, soya bean flour and corn flour to it.
Now add salt, carom seeds and oil to it.
Mix everything well.
Now knead the flour using warm water.
Keep adding little water and prepare a soft dough just like the dough for chapati.
The flour is soft, and ready.
We have used more than ½ cup water to knead this much dough.
Cover the flour and keep it aside.
Within 20 minutes, the flour will get fluffy and will be set.
20 Minutes are over and the dough has also fluffed up and is ready.
Put oil on your hands and spread it all over.
Crush the flour once again with oily hands to make it smooth.
Our dough is ready and a great aroma is coming from the multigrain flour.
Now we will make the chapatis.
Take dry dough in a plate for the chapatis
Apply dry flour on your hands and break a ball from the dough.
Break the dough into a ball having the size of your choice to make a chapati.
We will make a medium sized chapati.
So break a ball of dough having a size of a lemon.
We will make round balls with the dough.
Dip it in dry flour and then roll on a rolling board.
It should be approximately 6 to 7 inch in length.
Keep putting dry flour on the chapati so that it does not stick.
Make sure it is neither too thin nor too thick.
Our multi grain chapati is rolled out and ready.
Once the pan is heated, put the roti on the pan.
Keep rolling out the other chapatis in similar way.
Turn the chapati over once its surface will become a little dark.
Flip the chapati this way.
Continue the same process for more rotis.
The roti is now brown in colour which means it is ready.
Apply ghee on the chapati.
Keep the roti on a bowl.
The roti will remain wet from below if you keep hot rotis directly on a plate or in the casserole.
All the rotis are now ready.
We have prepared 7 -8 chapatis from this much dough.
Put the chapatis in a casserole spread over a tissue once they are a little cool.
The rotis kept in the casserole will come out very crispy and soft.
