Hi, this is Dave for Expert Village. Today we're going to make what we call a stuffed
Cajun swamp log. So now we're going to do an extra step here. We're going to put a bell
pepper right on the burner so it can scorch, if you have gas it works great too or on the
barbecue. So we got our burner pretty much on high but we can turn it down a little bit.
If it's starting to flame too much, make sure you get some tongs maybe even use a little
hand mitt if you need to. Lay that just right on what you want to get you want to get a
blistering of the skin, it will turn black and it will take that waxy coating on the
outside off. Now you're going to have a nice tender bell pepper on the inside, that we're
going to chop up. You see it's starting to get scorched just like that so just leave
it on, almost done give it a little more time cause you want to get that skin nice and bubbly
and it will come off real easy. Plus you get all that flavor into the bell pepper and you
can also do this on the other type of peppers you like, poblanos will be great for this.
