What first?

When the onions are well sauteed, add chopped green chillies.
I know you're wondering why I didn't add the red chillies now.
That's because we're gonna add it finally.
It'll lose it's bright red color if you add now.
So add the chopped red chilles finally.

and 2 tsps. of Sambhar powder.
Cook it till the raw flavor of the spices goes.

Whenever you add a powder, I'm getting a very nice aroma!
Each spice has its own unique aroma.
Turmeric powder gives the flavor of turmeric.
Garam masala powder gives the flavor of spices and so on.
When the moisture evaporates and the vegetables become dry...
