Hello! This is Chef Sean Roe on behalf of expertvillage.com, here to talk about one
of the most important steps for food production, which is sanitation and safety. When you’re
dealing with any egg products it’s very important that you keep the eggs cold, that
when you’re handling egg products that you wash your hands frequently so that you don’t
cross contaminate or take raw egg and put it into a cook product. It’s also very important
that you use pasteurized eggs. This sauce is technically a cooked product. It’s still
always wise to use a pasteurized product, meaning it’s gone through a heat treatment
to bacteria that may exist in the product such as salmonella. When you’re working
in your environment it’s always important to wipe down and clean as you so that again,
detracts from any type of cross contamination that can happen. Keeping that in mind, I think
we should get started on the food preparation and we’ll get going.
