Today we will make pakora’s.
This dish can be made with ease and can be served in morning breakfast or during supper or if it’s raining.
This recipe can be prepared with many things.
Today we will make baingan (Brinjal) pakora.
Let’s see what ingredients are required to make baingan pakora.
Brinjal - 2
Besan (gram flour) - 1 cup (prefer using thick besan for making pakora)
Green coriander - 2 tbsp (finely chopped)
Green chilly - 2 (finely chopped)
Ginger - 1 inch piece (turned into paste)
Coriander powder - ½ tsp
Salt - ½ tsp
Red chilly powder - ¼ tsp
Oil - to fry pakora
Firstly prepare a mixture of besan.Add little water in besan and stir until all lumps get dissolved.
Add little water at a time as it will take much time to dissolve the lumps and the mixture can get thinner if we add large amount of water all together.
Add more water and stir for 4-5 minutes more.
If we stir besan nicely then the pakora comes out to be more fluffy and crispy.
Turn on the gas to heat the oil.
We have stirred the mixture well. It should have consistency like this.
For making 1 cup besan mixture we have used ½ cup water.
Now we will add spices to the mixture. Add red chilly powder, salt, coriander powder, ginger paste, green chilies and green coriander leaves.
Mix all ingredients well.
Mixture for coating baingan is ready now we will cut the brinjal’s.
Remove the stalk and cut Brinjal in round shape.
Now dip the brinjal’s in the mixture and later we will cut the other Brinjal as they turn black if sliced and kept for long.
Now fry the pakora’s. Coat each and every piece of Brinjal nicely with the mixture and place it in the pan.
Place as much pakora’s as possible at a time in the pan and cook until they get golden brown color.
Take out the pakora’s once they get golden brown color.
Like wise fry rest of the pakora’s.
Pinning hot baingan pakora’s are ready and taste very delicious.
