On behalf f of Expert Village, I'm Terry and today I'm going to give you tips on smoking
a beef brisket. Okay, we're going to talk about seasoning the meat prior to smoking
it. There are two methods. You can rub it with a rub, whether it be a granule bar-b-que
rub mixture, garlic salt, or whatever you flavor you might want to come up with. You
can also inject the meat with an injector syringe like you would a turkey. I got this
rub from my local supermarket. It's a bar-b-que blend. It's called sweet and tangy. You just
sprinkle it on there. The reason they call it rub is because you actually rub it into
the meat so that it doesn’t come off while you're cooking. Massage your meat. When you
rub the graduals, it'll get down between the grains of the meat. It's basically the same
as injecting it. You only need to do the meat side. You don't really need to do the fat
side because you're just wasting your rub. Work that into the meat like so, and then
you're ready. Those will cook down with the juices through the meat and it'll give the
meat a little more flavor. The smoke will add a little bit of flavor also. This will
give you a little bit of bar-b-que flavor.
