Hi this is Dave for Expert Village. Today we are going to make eggplant Parmesan. Now
that we have all of our dredged eggplant together we are going to add some sauce to the bottom
of the baking dish. This is our homemade sauce that we have just made. What you want to do
is put a nice thin layer down on the bottom here so it does not stick. Now this is one
of those non stick type of flexible pans. Chances are they will not stick anyway but
why take a chances. Plus it would have a nice flavor on the bottom to. So just go ahead
and take your time and roll that around onto the bottom. If you are in a real hurry you
can pour this in and just move it around. But this is a labor of love here so if you
have the time why don't you go ahead and do it. We are going to have plenty of sauce for
the other layers. So make sure you just cover the entire bottom including the corners. Just
a really thin layer. Make sure you press it in all those small corners. Put my small ladle
into there. Again this would keep it from sticking and it may also give it flavor to
the bottom.
