Let's make flogeres with feta cheese and fresh mint!
Cover the phyllo dough to avoid drying.
Wash the mint well and then chop it finely.
Grate the melichloro cheese
place it in a bowl, adding the mint.
Grate the feta cheese using your hands.
Add the cayenne pepper to the bowl with the cheese and the mint ,break the eggs in a bowl and whisk gently.
Add the egg mixture to the bowl with the cheese.
Spread a bit of olive oil on a baking pan.
Cut the dough into 4 pieces, 5cm wide each.
Take a piece of dough and place 2 tbsp of filling on one end. Seal the sides and then begin to wrap, making a "flogera".
Follow the same procedure with the rest of the phyllo dough.
Arrange the flogeres on the baking pan with the sealed sides at the bottom.
Drizzle some water over the flogeres.
Bake in preheated oven at 180°C, for approximately 20 minutes.
Remove the flogeres from the oven and wait for 10 minutes until they cool off, and serve.
