Today we are going to do a whiskey and marmalade glazed ham
this is one that hands from our farm, Stocks Farm
We are going to poach it first with some water with orange,
black pepper corns
a whole cloves. This one is going to want about an hour and a half
First of all get the orange and pop the orange in the pan then get the cloves
and the black pepper corns and pop them in the pan
and put the ham in
the ham is about done
so we are going to take this pan off and we are going to make the glaze
We are just going to put some nice thick cut marmalade into a pan
and we are going to heat it up slightly
and add a little bit whiskey just so it becomes pliable
We are just going to melt the two together
This is going to make our glaze
to go
over the ham
Oh lovely.
On we are just
going to pull the ham out
So we are just going
to cut the strings take a little bit of fat and string off
Now be careful this is very very hot
just take that little bit of fat and skin off

so we are just going to score
down the joint
just helps the glaze stick to it
and it makes it look nice and pretty as well
So we are just going to brake the sugars and marmalade right down
You just want a nice
fairly runny glaze so it's nice and loose, its just going to go over
the gammon and coat it nice and evenly
Now we are going to start
pour this glaze over it
drizzling it over gently
this will give you a lovely bitter sweet flavour on the outside
Because we have cooked it with some orange its going to have a
really orange flavour to go with the ham.
So Christmasy.
And now we are going to put it into the oven now it's glazed.
That's going to take about fifteen to twenty minutes
In a domestic oven at home at 200 degrees it would take 20 to 25 minutes.
