>> DEANNA OLSON: We are here in Minnesota at the GIG Conference, and we are going to
talk to the Chef, Chef Aaron, and find out how they keep us safe and fed at the conference.
Chef Aaron.
>> CHEF AARON: Hello. Well, what we do here, I travel with GIG every year and we go from
state to state for all the conferences. I am the person that is in charge of making
sure that all of the food is safe and it's good. And we make the menus, we help ...
we come in and we help the chef of the hotel that we go to, we educate the staff - the
kitchen staff, front of the house staff - we work with all of the F&B individuals in
the hotel to ensure that they, get all the information they need, and be able to service
the gluten-free community. This year, usually I do this by myself, but this year I have
my apprentice with me, Aleatra Jones, she works with me in DC ...
>> DEANNA OLSON: Hi! It's nice to meet you.
>> ALEATRA JONES: Thank you, it's a great time being here. This is, like he said, my
first conference, and so, like I was telling you before, for me ... I have been studying
for about 18-months now. I'm an Executive Chef of a private school in DC, and so it's
like everything in the papers and the books and you know, online, and all the books that
he has given me, are all coming to life now. It is really cool to see everything and how
everyone gets together. You know me personally, I have a food allergy, I'm allergic to tree
nuts which is anaphylactic for me so it can be, you know, within a few minutes I can't
breath and it can be fatal for me if I don't act immediately. So, someone who has an allergy
to anything I am very sensitive to and I'm just really happy to be here. It's a lot of
fun and it's, you know, taking learning to a whole other level. To be hands-on with everything
and helping everybody, it's awesome, I like it.
>> DEANNA OLSON: What's so exciting is that you are not just coming in and making sure
that the food for the exhibitors and for the people attending is safe, you are creating
awareness within the hotel staff. Which I think is wonderful because it expands our
ability to travel and to go to new places.
>> CHEF AARON: I like to do this, and this is just a lot of fun for me. And a lot of
fun for everybody out there. And like I said, it is a big family for us.
>> DEANNA OLSON: It is for us too. Thank you so much for being part of it. Thank you.
