Dhokla is a very delicious Gujarati snack, it is made in various ways
Today I'm going to make Khaman Dhokla
It is an instant dhokla recipe
Lets see the ingredients required for making Dhokla
For this we will need
Bengal Gram Flour - 1 cup
Semolina (Rava) - 2 tsp
Salt - 1/2 tsp
Oil - 2 tbsp
Sugar - 1 1/2 tbsp
Mustard Seeds - 1 tsp
Curry Leaves - 10 to 12
Cilantro - 2 tbsp, finely chopped
Green Chillies - 3, cut lengthwise
Lemon - 1
Water - 1 1/2 cup, for tempering
Fruit Salt
Water - 3/4 cup, for making batter
Lets start making khaman dhokla
Take gram flour in a bowl
Add semolina
Add 1/4 tsp salt
Mix well
Sieve gram flour before making batter
Now make batter adding little water at a time
Batter should neither be too think nor thin, its consistency should be like that of pakora's batter
Mix until no lump remains
Now add 1 tbsp oil
Mix well
Take a microwave safe tray and grease it with the oil, so that dhokla doesn't stick to it
Add 1 1/2 tsp fruit salt to the batter
Mix the batter well
Batter has become fluffy
Don't stir batter for long, add fruit salt just before steaming, mix well and quickly pour it into the tray
Microwave it for 4:30 minutes on High power
It has been 4 minutes, lets check it
Check Dhokla with a knife, If the knife comes out clean, dhokla is ready.
It is sticking a little so microwave for another 30 seconds
It has been 4:30 minutes, now check the dhokla. Its ready, now take it out from the microwave
Cover it and keep it aside for 5 minutes
Now we will make tempering for the dhokla
Heat 1 tbsp oil in a pan
Oil is heated, now add mustard seeds to it
Once mustard seeds stop crackling, add curry leaves
Add green chillies
Add 1 1/2 cup water
Add sugar
Cook on medium high flame
Add salt
Dhokla has cooled, now take it out in a plate
Syrup has cooked now add lemon juice
Transfer dhokla into a tray / pot
Cut it into any shape of your choice
Now slowly pour the syrup over the dhokla
Slowly add the syrup so that dhokla completely absorbs the syrup
Now take it out into a plate
Garnish with chopped cilantro, you can also add shredded coconut over it
Khaman dhokla is ready
It is very soft and spongy
You can serve it with green chutney or any sweet and sour chutney
