Hey Chef Kendra Here and today were making corn muffins, these tastes very similar to
Jiffy Corn Muffin mix.
My mom used to make Jiffy muffins and I always thought of them more of a treat than bread
when I was a kid. I didn't like "real corn bread" I do now, but I digress.
OK, let's get some flour in our bowl. Now some corn meal goes in. Next up is some salt,
some baking powder and finally some sugar.
Whisk this to combine, and now we're going to prepare our wet ingredients.
We have regular milk here and we're going to add an egg and then some oil and give it
a robust mix.
We're going to combine the wet stuff with the dry stuff and stir just until we get it
combined. We don't want to over mix our batter.
Now, were going to butter a muffin pan, I'm using a mini muffin pan but it's your kitchen,
do what you want.
Now just spoon the batter inside the pan. Fill the cups of the pan about ¾ in up. Make
sure your oven is preheated to 400 degrees.
Bake for 10-15 just until they're golden brown and tasty.
