Hi! I'm Rich Buccola of New York City and today on behalf of Expert Village, I'm going
to show you how to make stuffed eggplant. Here are the lines of the onion. Again, remember
your finger technique. Keep your fingers in so the blade hits the knuckle. Just go along
with the natural lines of the onion. This onion just save it for later. Turn it this
way and just give it nice cuts. You're probably going to be too big there, so again, same
technique I've been doing with all the chopping. Point the blade, work the back of the blade,
and chop it fine. Don't lean over the onions or you're going to be crying. Nobody wants
to see you cry. We want happy cooks here on Expert Village. Happy cooks. Chop up your
onion. When we come back, we're going to start sautéing and browning.
