Today we will prepare a pork fillet with figs and grapes,
with the help of Marc.
We need a pork fillet,
6 figs,
1 red pepper,
1 onion,
fresh aromatic herbs if you have,
grapes,
honey,
liquid cream,
butter,
balsamic vinegar,
and olive oil.
After having washed the figs,
dry the well with a towel.
(cut the figs in two)
cut the pork into thin slices
cut the onion into slices
and the red pepper into long and thin pieces.
Pour the oil into the stove in order to fill its bottom
then put turn the fire on and let the oil heat
Afterwards, we will cook the pork, one slice at a time, one side at a time
After 2 or 3 minutes, we turn the pork slices on the other side.
When they are cooked, we lay them on a plate,
and add the following slices.
After we got rid of all the pork fillet slices, we put the onion into the same oil.
And we mix...
one minute
After that, we add the figs,,,
We pour the honey,
let's say 1-2 spoons,
we mix it so it caramelizes a little bit,
and the add a spoon of balsamic vinegar,
and we add the red pepper
and the grapes
some aromatic herbs
thyme or savory,
and in the end you may add some cinammon if you have some
let's add 2 little pieces of butter
so the sauce is more unctuous
and 3 spoons of liquid cream.
We mix,,,
afterwards we add the pork and let it cook gently
during 5 minutes, under the stove's lid...
Bon appé*** !
You may serve with puree, which works very well,
or with rice.
