We've added a little twist to our traditional favorite.
Here's how to make our fruit pizza.

(Rachelle Lemon). Hi, my name is
Rachelle Lemon and I'm a dietetics student at
Eastern Illinois University and today I'm going to show you
how to make a recipe that's packed full of fresh fruit.
It's called healthy fruit pizza.
Fruits and vegetables play a really important role
in promotion and disease prevention.
This is why guidelines recommend that we have
five to nine servings of fruits and vegetables daily.
Two to four of those servings should come from fruits
and three to five should come from vegetables.
Diets rich in fruits and vegetables have been associated
with a decreased risk in developing certain types of
cancer, heart disease, stroke, even has been shown to decrease
blood pressure and those who have high blood pressure
when accompanied with a healthy diet and excercise.
It's also been associated with to help with weight management
because fruits and vegetables have a lot of water and fiber
so it can help you feel fuller for longer.
Also, they contain phytochemicals and
minerals and vitamins that are essential for good health.
So with that being said, we're going to get started
with our healthy fruit pizza.
What you need is we're going to start with
the ingredients, pie crust.
So I bought the Pillsbury kind because I heard
that was the best.
We're going to need a cup of water and we're going to use
sugar-free cook and serve vanilla pudding and we're also
going to use sugar-free low-calorie gelatin lemon.
And we're going to use fat-free cream cheese and Splenda
or a sugar substitute of your choice.
Then also Cool Whip.
This one is fat-free or you can use reduced-fat.
So we start with a pie crust.
What you are going to do is you're going to take the
pie crust out of the package, roll it out onto
a 14 inch pizza pan and then you're going to put it
in the oven for about 400 to 450 degrees for about
6 to 8 minutes or until golden brown.
Now while that's cooking, you can start with
the gelatin and this is really good.
You get a little saucepan like this and you put in the pudding,
the vanilla pudding, and a cup of water.
Now you're going to want to stir constantly over medium heat,
bring that to a boil.
Once that's to a boil, you're going to add the lemon gelatin,
and cook for about one more minute.
Then, when that's done, it should look something similar
to this and it should set up and be a little bit thick.
Okay, and then when you're done with that, you can start with
the cream cheese sauce and that's really easy.
You just do the fat-free cream cheese and cube it up, put it in
a mixing bowl, and then add two tablespoons of Splenda
or a sugar substitute of your choice.
Then you're going to add 1/2 cup of the Cool Whip
and then you mix that all up together and
the finished product will look similar to this.
Okay, now once that's done, you pull your pastry out of the oven
and this is what it should look like.
Then, we're going to add the cream cheese sauce first.
So you just get a big glob of it, spread it all around.
You want to leave kind of a, spread it to almost
1/2 inch from the edge.
Make sure you use all of it because it's really good stuff.
Next, you'll do the gelatin on top of that,
the gelatin sauce that you made.
And that's the same thing, spread it around to 1/2 inch
to the sides of the crust.
Now, the fun part, you can add the fruits and vegetables,
fruits, not vegetables, that a different pizza.
So we're going to add some apples and kids love to help
with this so it's really important that they be included.
People of all ages love this pizza
and can be enjoyed by them.
When you want to add fruits and vegetables,
you want to think of like colors.
It will help you to get a good variety in your diet.
So, for example, we have strawberries here that we can
associate with red, we've got the green apples, white we've
got bananas, we have mangarine oranges for orange
and we also have purple for the purple grapes.
Then, once that's all finished, you put this into the
refrigerator and chill for about an hour
and you have your healthy fruit pizza.
So like I said, this is good for any dessert, breakfast, dinner,
or lunch, and I hope you enjoy the pizza as much as I do.
