My name is Brandon Sarkis, on behalf of Expert Village. Today, I'm going to show you how
to roast a traditional Christmas duck with red currant jelly sauce. And now would be
a good time to turn our oven on to 425. So I've gone ahead and turned it on. Now I'm
going to take my ducky and my twine, and you're going to want a whole lot of twine for this.
I'm talking probably five feet, six feet. And if you get too much, always you can cut
it off. So, I'm just getting about six feet of twine here and the cutter on my twine doesn't
want to cooperate. That's OK. I have a knife. I don't need a stinking cutter. There we go.
So what I'm going to do is I'm going to take my string, and I'm going to tie a knot on
each end because this butcher's twine has a tendency to come unraveled. It's not the
twine you're used to seeing at the hardware store. So we'll just do a little, simple knot
on each end, as such. Now, how to truss up a duck. The idea behind this is to keep the
duck as compact as we can. So what we're going to do is we'll do a tie like this. We'll tie
him up, as such. And we want to go ahead and make a knot on this end, because this is going
to be our starting point. So there we go. So now what we do, if you ever truss anything
else, you just take and you make a loop like this, and you just loop it around your duck.
The other option is you can go up, put your finger here, go under as such, get over here,
and come back through like that. And the whole time, you want to keep it tight, but the problem
with doing it this way is that you've got to watch out, because the knot will kind of
walk its way around the duck. And you'll see what I mean in a second. Just go ahead and
do one more around here like this, because what happens is as you tighten the knot up,
it tends to go back around. So, just be aware of that when you're doing it. So we'll go
ahead and catch the wings with this one. And it looks like I had chosen just the right
amount of string to do this, because all we're doing with this truss is keeping the wings
and legs in check like that. Now we're going to do another truss the other way around,
right now.
