Hi! This is Dave for Expert Village and today we making Calypso Pork Roast and Island Fried
Rice. Okay for the sauce for our Calypso Pork, we are going to be using two types of rum
and you may wonder why there are two types in here. I'll tell you we want to use a dark
rum that has a lot of sugar cane flavor in it. This is really a sweet rum. You may recognize
it and also we want to use a real dry rum and the difference is this will leave a lot
of death of flavor in the sauce below and the dry rum is really a nice finish on the
top and of course in this recipe, all of the alcohol will be burned away during the cooking
process so you don't have to worry about that. It is really necessary that you do this part
of it. So it's not really expensive. We are going to use about an ounce of each in this
recipe and it is going to mix with our other flavors so you will really enjoy it.
