egg pasta
one of the easiest recipes
for making the traditional egg pasta you need
100 gr pastry flour
and one egg, no more no less
break the egg into the flour
traditionnally it was made on a board, but in this manner
you don't spread flour all over the table and you clean up quickly
the egg of normal dimension, so if you buy it
in a supermarket medium size,
not extra large or you need a little more flour
start kneading letting flour and egg melt
until a rather homogeneous dough to be kneaded
using you hands
when the flour will be completely absorbed
make a ball of dough and let it dry
now you can roll using a rolling pin, as by the traditional way,
or using a pasta machine if you want to make pasta more quickly
then cut it to the wanted shape
